Cod with parma ham and sweet potato mash

Ingredients

  • 4 x 170g skinless and boneless cod fillets
  • 1kg sweet potato, peeled and chopped
  • 2 tbsp. finely chopped flat-leaf parsley
  • 1 tbsp. butter
  • 4 slices parma ham
  • 2 tbsp. olive oil
  • Broccoli, steamed, to serve
  • Salt and pepper, to taste

Cooking Steps

  1. Preheat the oven to 180ºC / Gas mark 4.
  2. Place the sweet potatoes in a pan of salted water and boil until tender, for around 15 minutes. Drain and allow to steam dry for 1 minute. Return the potatoes to the pan and mash them with the butter, a good pinch of salt and pepper, and the chopped parsley.
  3. While the sweet potatoes are cooking, lay the parma ham slices on a work surface or chopping board. Top each with the cod fillet. Wrap the parma ham around the fish so it’s completely enclosed.
  4. Heat the oil in a non-stick frying pan and add the cod fillets. Sear on all sides, then place in the oven for approximately 5 minutes, until it’s cooked all the way through.
  5. Serve the cod with the sweet potato mash and the steamed broccoli.
