Cod with parma ham and sweet potato mash
This cod recipe is packed with protein and flavour. A deceptively easy dinner for four.

Ingredients
- 4 x 170g skinless and boneless cod fillets
- 1kg sweet potato, peeled and chopped
- 2 tbsp. finely chopped flat-leaf parsley
- 1 tbsp. butter
- 4 slices parma ham
- 2 tbsp. olive oil
- Broccoli, steamed, to serve
- Salt and pepper, to taste
Cooking Steps
- Preheat the oven to 180ºC / Gas mark 4.
- Place the sweet potatoes in a pan of salted water and boil until tender, for around 15 minutes. Drain and allow to steam dry for 1 minute. Return the potatoes to the pan and mash them with the butter, a good pinch of salt and pepper, and the chopped parsley.
- While the sweet potatoes are cooking, lay the parma ham slices on a work surface or chopping board. Top each with the cod fillet. Wrap the parma ham around the fish so it’s completely enclosed.
- Heat the oil in a non-stick frying pan and add the cod fillets. Sear on all sides, then place in the oven for approximately 5 minutes, until it’s cooked all the way through.
- Serve the cod with the sweet potato mash and the steamed broccoli.
