Mussels with creamy white wine sauce and tagliatelle

Ingredients

  • 1kg mussels
  • 200g dry tagliatelle or spaghetti
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped or crushed
  • 200ml dry white wine
  • 1 tbsp chopped fresh parsley
  • 100ml double cream or crème fraiche
  • Salt and pepper to taste

Cooking Steps

  1. Clean the mussels thoroughly and make sure all the shells are tightly closed and without any gaps or cracks. Discard any with shells that are damaged or open.
  2. Cook the pasta according to the pack instructions, drain and keep warm.
  3. Heat the oil in a pan and add the onion and garlic. Fry over a medium heat for about 5 minutes, until softened (do not allow the onions to colour).
  4. Increase the heat, add the wine and mussels, season with salt and pepper, cover and steam for 5 minutes.
  5. Add the cream or crème fraiche and shake to combine with the mussels.
  6. Add the pasta and toss through to combine with the cream sauce.
  7. Dish up the pasta and mussels between two bowls, discarding any mussels which haven’t opened.
  8. Garnish with the chopped parsley and serve immediately.
